Adams Distillery hopes to be back producing gin and whisky on site by the end of the year, after a fire in February caused about $2.5 million in damages to its production shed.

Initially the estimated damage was $1.5 million, but co-owner Adam Pinkard said it turned out to be about $2.5m.
"We have submitted an application to rebuild the shed with the [Northern Midlands] council and we're working through that at the moment," he said.
"If everything goes to plan and it passes without any issues we are hoping to rebuild in June.
"We are hoping to be producing gin and whisky on site by the end of this year or early next year."

Mr Pinkard said they could not produce either spirit on site, but were producing gin thanks to Western Tiers Distillery allowing them to.
"Our whisky is very specific and we don't want to mess with the flavour, so we are yet to begin producing it again," he said.

He said it was great validation for their work, as they age their whisky uniquely and there were naysayers when they started doing it.
"I think we are the only ones who store it that way in Australia," Mr Pinkard said.
"So its matured and it's cleaning up at the awards, which is great recognition."
