Wayside Butchery owner Christine Bessell got into the “game” about five years ago as a point of difference.
The Prospect butchery, which Mrs Bessell has owned for 16 years, now sells meats such as camel, crocodile, and buffalo.
And it’s more popular than you would think.
“People are having a go,” Mrs Bessell said.
“Crocodile is very popular at the moment. It kind of like a cross between chicken and fish, in flavour. I prefer the camel over the crocodile. It’s very similar to beef but sweeter.”
Mrs Bessell mostly turns the meats into sausages, although she is looking to get her hands on some camel steaks.
She said customers were snapping up the exotic snags in the lead-up to Christmas, all looking to try something just a little bit different this barbecue season.
