LAUNCESTON restaurateur Bianca Welsh says she was flying the flag for Tasmania after being named the joint winner of the prestigious Electrolux Appetite for Excellence Young Restaurateur of the Year award.

Mrs Welsh, who co-owns and manages Stillwater Restaurant, Black Cow Bistro and Mill Providore, shared the award with Chris Thornton, of Restaurant Mason in Newcastle, on Monday night in Sydney.
"I'm honoured and still speechless," Mrs Welsh said on Tuesday.
"It is a a real honour to be classed with previous restaurateur winners like James Viles of Biota, who I think is doing incredible things in the industry.
"It is not just my award, it is also for my business partners and my team, as none of this would be possible without them and it shows that we are on the right track and it is a really nice pat on the back.
"I was very proud to fly the Tasmanian flag and for me this award shows that we [Tasmania] can do this, and we are on the same playing field as the rest of Australia."
Mrs Welsh won a trip to Asia and a share of $8000 as part of the prize.
To win, she needed to answer in detail a series of questions discussing her involvement, role and vision in the industry, and was quizzed by a panel of revered industry professionals.
