Fire crews arrived at the scene just after 8pm with the fibreglass yacht, named Te Waipounuamu, fully ablaze.
A witness told The Examiner that a large crowd gathered in the area near the slip yard off Park Street to watch as the yacht was gutted by fire, with firefighters unable to stop the vessel from being fully engulfed and destroyed.
Ambulance Tasmania staff ordered the crowd back from the area to avoid inhaling the potentially toxic black smoke.
Two crews from the Launceston Fire Brigade attended and took about 10 minutes to extinguish the fire.
There appeared to be no injuries from the fire and adjoining yachts avoided damage, a witness said.
A cause of the fire will be determined following investigations.
