After shelling out to travel to NSW, the chef did not crack under pressure and produced a beef carpaccio, fried truffle egg, rocket, and pecorino creation.
The meal was served at a pop-up restaurant for the 200 diners who voted on their favourite of four meals.
Mele's meal was one of the final four egg dishes as selected by television personality Manu Feildel.
But unfortunately his eggs were beaten and Yum Yum Bakery in Guildford, NSW, took out the title with its awarma and egg pizza.
Yum Yum Bakery's Najib Haddad said their winning dish was a scramble of two cultures: Australian and Lebanese.
"People often overlook the humble egg but in my dish it's the egg which really elevates the recipe to make it something unexpected and special," he said.
The other two finalists were the turkish poached eggs by Mount Street Breakfast Bar, West Perth (WA), and the bosphorus benedict by Rustic Pearl, Surry Hills (NSW).
The plan to hold the Eggsellence Awards was hatched by peak industry body Australian Eggs.
