The smaller-style, three night festival held on private land in Lone Star Valley, near Lilydale, was hit by tragedy when the man died on the Saturday evening of the festival.
A statement from organisers said the man, Paul, was beautiful, warm and funny.
"For us, Panama 2023 will always be remembered as the year we lost our dear friend and beloved community member, Paul," they said.
"Paul and his family were always at the heart of our festival, and we are heartbroken to have lost him. Our love goes out to his partner Georgia and her two children, who will miss him terribly."
The organisers said they continued to grieve from the loss, and were working on ways to support those affected.
"Panama 2023 was also beautiful. A deeply moving experience of art and connection to land, of community, family, culture and friendship," they said.
"Our artists helped us understand what we had experienced and allowed us to process the situation through music and song.
"We're not sure what comes next."
A crowd-funding campaign Support for Georgia has been set up to offer support to Paul's wife and children at GoFundMe.
"This fundraiser allows us to come together as a community and give Georgia some space and security as she navigates life without Paul. Please spread the word and give what you can," they said.
