"We just had a really great year last year, everyone's responded really positively to the displays and the restaurant," he said.
For both Mr McCoy and wife, Ali it is their first time owning and managing a business. Mr McCoy said constantly evolving and being open to changing expectations had led to Pachinko's success.
"When we started a year ago, we thought we could probably get by without a liquor license which was a bit naive," he said.
"Since getting that, things have transformed into a little bit more a focus on drinks as well which has been nice.
"It's taken us in directions we wouldn't necessarily thought we'd be going in initially so it's just been fun to evolve in the last 12 months."

Since moving back to Tasmania six years ago, Mr McCoy said he and his wife have built fond relationships with fellow successful small businesses such as Bryher cafe and Saint John Craft Beer which have aided Pachinko.
"When we got back we could see Launceston had a lot of potential and there were a lot of people out there doing cool stuff ... and we wanted to contribute to that," Mr McCoy said.
He expects Pachinko to continue to build on local connections and potentially offer more in the ways of specialised beers as well as natural wines.
"In 2020 we just want to keep honing things and making things just that little bit better and connecting with local producers, that's what we've have a lot fun doing," he said.
