Instead of opening this weekend, the City of Launceston council has moved the date back to August 17.
General manager Michael Stretton said it was a difficult decision made due to the recent wet weather impacting the construction progress.
"There are still some outstanding works that are weather dependent and we would also like to give the site an opportunity to dry out before we open to the public," he said.
The council originally said the park would be open toward the end of June.
The opening was then pushed back to the end of July.

"What we'd reiterate to Launceston families is that we are working very hard with our contractor to have the park ready for opening, and to please be patient - we are nearly there," Mr Stretton said.
"Despite the bad weather, the park is looking really fantastic and our contractors are working rain, hail or shine to wrap construction up.
"Riverbend Park is going to be a fantastic community asset for Launceston, one of the best regional parks in Australia, and is going to have something for people of all ages and all abilities.
"It's going to be worth the wait."
Mr Stretton said the council had been in contact with organisations about partnering with them of an official community opening of the park, with entertainment, food, and activities.
