Surrounded by ladders, scaffolding and tradespeople, Adam Pinkard and Adam Saunders are seeing their dreams realised after spending $3 million upgrading Adams Distillery.

But they are already planning bigger and better dreams for the coming years, with the figure of one million litres of spirits, cider and beer slated.
“We do everything for the future. We have a 10-year plan of where we want to be and backtrack for 10 years,” Mr Pinkard said.
“We are aiming for a million litres a year and I think we’ll be there in five years.
“This is 15 years ahead of where our business plan was,” he said.
Work on Adams Distillery’s new bond store, visitor centre and cafe should be complete by the end of November, with a big event planned to launch their first release single malt whisky on December 15.
Thought has gone into how the distillery looks, from the tree-lined avenue as you enter Glen Ireh Estate, Perth, and the new entrance flanked by stone gabion baskets, to the striking gunmetal grey and orange combination throughout the structure.
“We tried to keep it industrial, modern and chic, with gabion walls and by repeating the same beams throughout,” Mr Pinkard said.
The visitor centre includes a spacious bar with a television screen and speakers, catering kitchen, toilet facilities and 20 square metre cool room.
There is a function room and offices upstairs and an outdoor deck that leads to the newly-laid lawn area.
The lawn has enough space for outdoor furniture and a marquee, with Adams planning functions and weddings that will also advantage of more than three hectares of botanical gardens tended by third business partner and landlord, Professor Bernie Einoder.
Once they have settled into their new accommodation, work on the next stage will begin in earnest, with Adams Distillery planning to take advantage of the Perth bypass that will go right past the entrance.
“We’ll have a big sign out the front and hoping we have a sign on the Midland Highway,” Mr Pinkard said.
They would like Adams Distillery to be a destination stop, similar the Christmas Hills Raspberry farm, offering food seven days, with Sunday sessions and regular events.
While all this has been happening, the pair have been working on a side project that will also be launched next month: craft beer.
