Hagley's Stelo at Hazelbrae House will be re-branded and from there be known as Stelo at Pierre's.
Co-owner Lauren Johnston said the name change allowed for expansion, with Stelo meaning stem in Italian.
"We thought this [was] an apt name for our restaurant as Stelo can mean the stem of a tree or a wine glass," she said.
"Additionally, our food is inspired by Italian cuisine, so the use of an Italian word was perfect".
Ms Johnston said Pierre's in George Street was a Launceston institution and had memories of the cake and coffee shop when she was a child which they hope to bring back.\

"We feel extremely honoured to take over this iconic restaurant and provide Launceston with our wholesome food and friendly hospitality," she said.
Last year saw the team at Stelo grow from strength to strength, winning Best Overall Stall at Festivale. Head chef and co-founder Nathan Johnston hoped Stelo would be a crowd favourite again in 2020.
Pumpkin arancini and antipasto will be back at Festivale this year, Mr Johnston said.
"We just had to have them on the menu again this year," he said.
Other Italian-influenced food will also be on the menu including cannoli, salumi and focaccia, along with iced affogato and blackberry panna cotta.
The pair have the freehold lease on Pierre's, which opened in 1956, and will initially open for lunch and dinner, with expansion to breakfast possible in the future.
Stelo will open in mid-February, with bookings open from the start of the month.
