Former Hobart resident Bourchier, who competed in the doubles alongside older brother Edward, came into the tournament as number two seed and didn't disappoint as he overcame fourth seed Christopher O'Connell 6-4 6-4.
"It was a very good week, I couldn't ask for any more. I got tight towards the end, but I'm happy with the win," Bourchier said after the win.
"Always winning an event is something special because you don't do it every week. Hopefully I can keep it going and win a couple more this year."
Bourchier only lost one set throughout the tournament, and been battling a niggling injury in the lead up to the Mornington event but proved too strong for O'Connell, who hadn't lost a set before the final.
After building a strong junior tennis career through grand slams, Davis Cup and the Youth Olympics, the 23-year-old Tasmanian product sits at 413 in the world ATP rankings and is continuing his rise.
Bourchier claimed his first top-100 win over Spain's Roberto Carballes Baena in Canberra during January.
