Vineyard Seafood is a pop-up restaurant that appears at events, festivals, and vineyards around the state, with fresh seafood dishes sourced from Stanley, and East Coast, producers.
Prior to starting Vineyard Seafood Ms Brown was the operator of Stanley restaurant and accommodation provider Cable Station, but working as a pop-up has enabled her to do what she loves: “travel around Tasmania and see a bit of the state myself, and build on existing relationships with other producers.”
At Festivale, she will be serving up scallops, grilled or steamed, in a half shell, char-grilled octopus, natural oysters or oysters served spicy kilpatrick, and oyster shooters.
“Some of those menu items are some of our signature dishes if you like, but we also always like to put a new itme on the menu every year, and this year that’s the steamed scallop with ginger soy and sesame in the half-shell,” Ms Brown said.
The oyster shooters involve pairings with alcohol producers at Festivale, with one paired with a Moo Brew stout, a Delamere sparkling jelly oyster shooter with fresh wasabi, and a Hell’s Gate gin and tonic granita.
Additionally, their dishes will be designed in accompaniment with their neighbouring stallholder Boomer Creak Vineyard, with the seafood to be paired with corresponding wines.
Ms Brown said the opportunity to collaborate was one of her favourite parts of Festivale.
“Boomer Creek are a new winemaker, so a relatively new name to the market, but they’re a beautiful East Coast vineyard with fabulous riesling, pinot gris, and a chardonnay and pinot noir, so well be doing some wine and food pairing,” she said.
Outside of Festivale, there’s other big plans in the works for Vineyard Seafood.
They will soon be operating out of the weekly Harvest Market, and are also debuting their own personal menu, encompassing smoked mussel pate, crayfish mouse, octopus terrine, and a confit of abalone.
