The site, in Charles Street, was sold recently and a development application has been lodged with the City of Launceston to turn the shop into a Japanese restaurant.
The development proposal includes a mini bullet train servery, a private dining area and a self-serve takeaway area.
The restaurant is planned to be called Kosaten, and would act as a chain to its store that operates in Hobart.
Internal modifications and new entrances will be made to the building. New signs will also be displayed. The development application said the alterations were “minimal”.
“This area of Charles Street is known as a strip of cafes and restaurants, the proposal strengthens this character,” the development application said.
The proposed hours of operation are 11am until 3pm and 5pm until 10pm.
