Maddison, who set the world record for the longest jump on a motorcycle at more than 100 metres, was hurt while warming up for a series of promotional stunt jumps.
Organisers refused to comment on the nature or extent of his injuries.
A Royal North Shore Hospital spokeswoman said she could not comment on his condition as he was still in emergency and undergoing tests and scans.
Maddison, from Kiama on the NSW south coast, has made an international name for himself by performing high-profile stunts at some of the world's most famous landmarks.
He jumped a bike on to the top of the fake Arc de Triomphe in Las Vegas and backflipped over the opening in London's Tower Bridge.
Last year he signed with the famous "Crusty Demons" stunt group, which tours the world performing stunts in front of packed stadiums.
