Roth, who is set to head to North and North-West Tasmania next week for community work and mentoring, already had one year left on his existing deal but added a further two seasons.
The 58-year-old helped guide the JackJumpers to their maiden grand final series in their debut season in the NBL after moving across from the Perth Wildcats.
"My intent was to be here as long as I possibly could, they also understood that too, I am just extremely humbled and excited," Roth said.
"My wife and daughter last night were over the moon. When they came here they saw what was being built and it was very emotional for me.
"I said a long time ago that this is a dream job and that's absolutely what it is."
Roth was the league's coach of the year award winner for his efforts with Tasmania and outlined his intent to be a JackJumper for the rest of his career.
"The big thing for me was the longevity to be able to stay here and actually build this ... I wanted to be here for a few years and put my footprint on this club," he said.
Roth was the league's coach of the year award winner for his efforts with Tasmania.
"Scott has built an incredible foundation that has unified not only a great group of guys, but the entire state in supporting the club in its infancy," JackJumpers chief executive Simon Brookhouse said.
"On behalf of the entire club - players, coaching staff, front office, partners and members - we are really pleased to secure Scott's signature and have him at the helm for the next three seasons.
"It gives us stability as we move into year two and beyond, with the majority of our playing squad also locked in."
Roth's deal contains a mutual option for a further year and is a key announcement for the franchise with the NBL's free agency period starting on Friday as well.
The JackJumpers have decisions to make on their imports with Josh Adams, Josh Magette and MiKyle McIntosh all coming off one-year deals. Adams has previously expressed his willingness to remain in Tasmania going forward.
The JackJumpers' Australian contingent of Jarred Bairstow, Matt Kenyon, Fabijan Krslovic, Will Magnay, Sam McDaniel, Jack McVeigh, Clint Steindl and Jarrad Weeks remain under contract for next season.
Roth's extension comes on the heels of Kenyon signing a one-year deal after a breakout campaign while key big man Will Magnay penned a two-year deal following an injury-interrupted first season with Tasmania.
Roth revealed that Sean Macdonald is likely to re-sign for another season as a development player.
