Emergency services responded to reports of a fire at the Liverpool Street institution about 2am on Monday.
An evacuation immediately took place with crews assisting some occupants escape through a second-storey window.
More than 30 firefighters helped battle the blaze at its peak. While it has been contained, crews remain on scene to extinguish remaining hotspots burning in the building.
"They will remain on scene for some time after it's extinguished to conduct an investigation into the cause of the fire," a Tasmania Fire Service spokesperson said.
Liverpool Street between Argyle and Elizabeth streets will remain closed until midday Tuesday due to power interruptions, smoke and the ongoing investigation.
"People directly affected by the fire with enquiries about access to their businesses and smoke impacts can contact Tasmania Fire Service 1800 000 699 and speak with community liaison personnel," the spokesperson said.
