Ingredients

  • San Remo No. 5 Spaghetti 500g
  • 1/2 cup olive oil
  • 2 garlic cloves, peeled
  • 2 x 400g tins whole tomatoes
  • 2/3 cup basil leaves, reserving extra for garnish
  • Salt & pepper, to taste
  • 2/3 cup grated pecorino

  • Step One: In a pot of boiling, salted water cook pasta as per packet directions, reserving one cup of the cooking water.
  • Step Two: In a pan on medium heat, add oil and garlic. Cook for 2 to 3 minutes until garlic is just colouring and then remove from pan.
  • Step Three: Next add tomatoes to pan and crush with a wooden spoon.
  • Step Four: Add 1 cup of pasta water to the pan and cook sauce for 4 to 5 minutes, stirring constantly on a medium to high heat.
  • Step Five: Turn off heat and stir through basil leaves and season with salt and pepper.
  • Step Six: Add cooked pasta to sauce. Add half of the pecorino to the sauce and stir through.
  • Step Seven: Divide into bowls and top with remaining pecorino and basil leaves.
  • Step Eight: Serve it up and then sit down with your family and enjoy!
