The 35-year-old will coach the school's first team boys in 2021 having also taken on a development role with TSL side North Launceston and a playing role with NTFA side Old Launcestonians.
The ex-Richmond and Port Adelaide forward said he was looking forward to leading Grammar through a full SATIS season, with games beginning later this month.
"It's a new role for me - I've co-coached and assistant coached, I've never taken over as a full-time coach which I'm really looking forward to," he said.
"I've trained lots of young kids before, but not through a whole season so it's probably a good taster for me.
"I join in with the boys in training because it's the way I know how to get to know people and it makes them feel more comfortable around me."

Grammar sport director Adrian Finch said Schulz's signature continued a growing partnership between Grammar and Old Launcestonians.
"We've got a young group of really talented footballers at the moment and we see a really good opportunity for us to nurture their development over the next three or four years," Finch said.
"Hopefully we'll have Jay working with our teams for a number of years to be as competitive as we can in the competition and also to give the kids access to the best quality coaching we possibly can.
"We've got experienced football coaches on staff that are working with students, but when you bring in someone of the calibre that Jay is - almost a 200-game AFL player at two clubs over 13 years - they trust what they're getting told is from the top."

Headmaster Richard Ford was equally pleased to have Schulz on the school's register.
"I'm thrilled that Jay's joined the team here at Grammar," he said.
"I've spoken to a number of [students] since they found out he was going to be coaching them and they're super excited they'll be able to learn from someone who's got incredible experience with the game, so they'll be listening to his every word."
Grammar has a bye in round one before meeting St Pats away on May 1.
