Tasmanian architects Cumulus have been reengaged to ensure the current aesthetic of the site remains the same, but it will be Launceston's Anstie Constructions that will manage the build.
Cumulus Studio director Peter Walker said the team were proud of the project.
"With increasing awareness of the role buildings play in our environment, we felt it was important to continue many of the environmentally sustainable practices that we initiated at the beginning of the project - from material selection to prefabrication techniques," he said.
During construction, a smaller cellar door will act as a temporary pop up - running seven days a week from April to September 2021.
