The husband and wife duo are behind Sabina's Petit Gateau, the latest addition to Launceston's cafe scene.

Ms Delphine said the idea to open the business came as an idea to plug a gap in the market.

"I've always had a really big love for pastry, I've been honing my skills for quite a few years, and I looked around Launceston and said what are we really missing, and that's what we're missing," she said.

"I've always had a passion for pastry, so it was time for me to do it for myself."

The small store offers a range of specialty creations, including macarons, cakes and brownies, alongside specialty coffee, made-to-order cakes and other sweet treats.

"We'd been looking around for quite some time for an actual shopfront, we weren't sure how we were going to go about it, but this place opened up, unfortunately through to some issues due to COVID," Ms Delphine said.

"We wanted to support someone local with the coffee, and obviously cake and coffee go really well together so we wanted to make sure we had the coffee to go with it - so we've been fortunate to find a great one from Spreyton, Leaping Goat."

Having been open for a little over week, Mr Lehner and Ms Delphine said they were "overwhelmed" by the support shown from the community.

"It's been very welcoming from the whole street, it hasn't been competitive or anything like that, coming into it as a business for the first time it's certainly made things a lot easier," Mr Lehner said.

Sabina's Petit Gateau is open at 139 St John Street, with options to eat in, take away or order in advance.
