After a decade at the helm of Mt Elephant Pancakes at St Marys, leaseholders Louise and Michael Williams and daughter Georgie are hanging up their aprons for the last time on New Year's Eve.

Louise Williams has spent the past 20 years working at the popular pancake parlous.
"It's been an interesting journey," Ms Williams said.
"I worked here for the original owners and my husband and I took over the lease 10 years ago alongside our daughter.
"It's been an exciting journey, one that's made us meet a lot of different people and create friendships all over the state, it's quite sad to think it's coming to an end and we won't be seeing them all again.
Ms Williams said the business was built by a Frenchman back in 1979, helping the business grow as the French are known for their sweet treats.

Ms Williams said she loved the location and the work, which is why she jumped at the opportunity to take over when the owners retired.
"My husband decided he didn't want to farm anymore, so we thought we'd give it a go," she said.
"I don't think he knew how hard we'd be working.
"We took over on January 1st which was such a busy day, he came home and said he never realised just how hard I worked."
During the height of the COVID-19 pandemic, the business shut its doors for six months, which gave the Williams family time for reflection.
"In that six months, we realised there was a little bit more to life than working seven days a week," Ms Williams said.
"It's a hard one because this is what I've known for 20 years, what my husband and daughter have known for 20 years, but you just don't know what's around the corner.
"We've put our heart and soul into the business."
Ms Williams said they were flooded with support after announcing their closure.
"We've had lots of regulars that have come from all over Tassie," she said.
"We've had one family who has been here three times in the last week."
The business will close its doors for the last time at the end of service on December 31.
"If you've been here before and enjoyed it, tell someone who hasn't been so they can come and try before we're gone," Ms Williams said.
"It's been wonderful, but I'm looking forward to what's ahead."
