Ask anyone to describe Tasmania's food industry in 2019 and words like innovative, local and high-quality would have come to mind.
When 2020 saw restaurants closed and chefs shut out of their kitchens due to COVID-19, the word adaptable quickly moved to the top of that list.
If this year has taught us anything, it's that Tasmania's food scene is worthy of many new adjectives: versatile, resilient, flexible.
While we aren't out of the woods just yet, and there have been some notable casualties, including Franklin, the state's most celebrated restaurant, there is hope on the horizon.
As state borders come down and we welcome travellers back, there is also a new appreciation for the produce and food variety that we are blessed with here.
