Having completed his first full season in the competition after stints in 2015 and 2016, the 23-year-old said it's an honour to take over from Nathan Matthews, who is set to take a step back and continue as a player.
"It's going to be a really big challenge but luckily I still have Nathan Matthews, who was the previous captain of the club, around and Brett Geeves, who was obviously an international player, so it's pretty handy having those two people in the team that I'll be leaning on a fair bit," Eastoe said.
The former Scotch Oakburn College student captained his side against Kingsborough last season in his first taste of the role and is looking forward to sinking his teeth into it.
"Obviously with the uncertainty, you can't really put your finger on it at the moment but everything's going well.

"Everyone seems to be really committed for this time of year, we've set up running groups and extra batting sessions with players already underway looking to develop their own games.
"We've gone for a youth approach this year, looking to bring in some players that will hopefully benefit us going forward and on the existing players, we are looking to improve internally to try and meet the goals of our season."
Beginning his senior career at the Knights in 2011, Eastoe represented Tasmania at under-17 and under-19 level, making his first-grade T20 debut in 2013 before playing the longer formats the next season.
Describing the start of his 2019-20 season as "inconsistent" following a year off, he finished with 401 runs at an average of 26.73 - notching up his maiden century in the Southern league.
"Towards the back end of the year, I had a little bit more success and then the 100 in the last game probably gave me a bit more confidence going into this year.
"I've already been working on a few technical flaws that I'm looking to correct, which will hopefully put me in good stead coming into this season."
