She's been a stall holder at events around Launceston, including Festivale, Beerfest and Harvest Market, for the last two years.

At this year's event in City Park she will be serving up vegan dishes such as lettuce cups with sesame and lemon pepper tofu, a lentil dal, a dessert option, hot chips with aioli, poutine and loaded fries.

Ms Allan said initially she was making small portions of food rather than offering a three-course meal option and it was not taking off.

"I was like I should do what I do at home, which is an entree, main and dessert, and people go 'oh it's like a restaurant' and I put restaurant prices on it," she said.

"I trialled this at Mona Foma and I was the busiest food stall there, so it's pretty cool."

Since Tasmanian Mushrooms had shut down in the state she changed her main to include a vegan dal.

"My main is beautiful...I make this dal, this beautiful Indian lady taught me this incredible recipe and I'll never tell anyone," she said.

"You get this half West Indian taste bit but then there are all these big bits of charred broccolini and charred beetroot.

"Everythings covered and not one person batted an eye-lid at $25 and I was like I feel good because it's a lot of work, nothing is out of the freezer it's all made there and then."

She drives to Exeter to get her hazelnuts and sources all of her ingredients within the state to ensure she knows the quality and where it is coming from.

Ms Allan said the dal had a lot of colours on the plate tied in with a green goddess dressing which was like a salsa verde with vegan mayonnaise.

"You know sometimes you eat Indian and you're like I haven't had any greens, people are like 'aw I feel like I've had a proper meal', it's $25 but there's so much work in it," she said.

About six years ago she became a vegan and has incorporated her cruelty-free approach into her cooking and stall.

"We need vegan food," she said,

"I'm really passionate about it, I grew up eating meat and I'm sick of boring vegan food.

"That whole thing of providing food for people where...animals don't get on trucks and line up at abattoirs.

"So this is my advocacy work as a vegan and I'm really passionate about it, I didn't know where my food came from."

Since moving to Launceston from Melbourne several years ago, she has tried to invigorate the vegan food scene in the city and used her passion for cooking to do so.

She has opted to remove the word vegan in her branding as at one event people became aggressive towards the stall and hurled abusive which she said was devastating.

However she said she was pumped and ready for Festivale, with her fresh new menu looking to fill some bellies at the event.
