The Eagles compiled their best total of the season to date - 7-198 - as a revitalised John LeFevre (76) continued his stellar form and captain James Storay made an aggressive 32 batting at six.
The Mountaineers made it to 0-64 in 11 overs thanks to Jordan Marshall (42 off 36) before Sam Freeman (3-8 and five maidens off 10) and Storay (2-32 off 10) evened out the equation at 7-149.
It took Gary Miles (22*) and James Jennings (27*), who took Jared Mason for 12 off the last three balls of the match, to see Sheffield home with five overs and three wickets to spare.
"We were very close and unfortunately just didn't get over the line, but that's cricket," Storay said.
"I just think we're showing a whole lot of improvement over the last few weeks, specifically with the bat.
"John's hitting his straps nicely but the young kids are starting to show a bit of intent and we're probably just letting ourselves down with the ball at the minute.
"But again, we're young and we're learning."

RIVERSIDE made it two straight with a bonus-point, five-wicket win over Wynyard in the Blues derby.
Chasing 8-184 after a first innings headlined by Lyndon Stubbs' 1-10 off 10, the returning Ramesh Sundra's 2-26 off 10 and Hashan Abeyrathna's 38, Riverside made light work of the target on their home deck.
Peter New (56) scored his second half-century of the campaign before Patty Mackrell blasted 59 not out for the second week running to see Tom Garwood's side home in 33 overs.
"Today was a really good win," Garwood said.
"Stubbsy wound back the clock today and just hit that really annoying length where the batsmen couldn't score and he bowled in partnership with Rama who kept it tight at the other end - he was fantastic to have back in the side.
"Things are starting to click for us - we're playing a lot more team cricket now, bowling and batting in partnerships, so it's exciting times."
LAUNCESTON held on for a tense 12-run despite some 11th hour heroics from Burnie captain Brady Yates.
The Lions hit 6-194 thanks to an 81-run opening stand from Cam Lynch (42) and debutant Nick Haydon (32) and a 21-ball 34 not out from no. 8 Tom Gray.
The Raiders paceman then took 2-29 and two catches as James Curran, skipper Ben Humphrey and Daniel Smith (3-34) all bagged multiple wickets.
Batting at nine after sustaining a finger injury earlier in the game, Yates (36 off 45) nearly stole the game for the hosts before being caught with an over to go as his side chased an unlikely win.
"it was a pretty amazing effort from him to almost get his team home," Humphrey said of his opposite number.
"It's the first time for a couple of years we've won on the coast so it was really good to get that monkey off the back.
"We haven't beaten Burnie full-stop for a while so it was really good to win."
ELSEWHERE IN SPORT
SOUTH LAUNCESTON made it five on the trot despite the individual brilliance of Devonport all-rounder Sam O'Mahony.
Posting 8-212 after Nathan Philip's (88* off 92) first big outing this season and 63 from Brodie Jarrad, the hosts looked in danger when no.4 O'Mahony followed up his 5-39 with a run-a-ball 78.
But a collapse of 7-41 saw the Knights claim yet another bonus point as the Orions were bowled out for 159.
Knights captain Tom Waller admitted his side hadn't been at its best, but was still pleased to win.
"[O'Mahony] bowled quite well and was nearly the difference batting wise," Waller said.
"Banger [Graham Donaldson] bowled a really good spell in the middle overs and he was the one that really challenged O'Mahony and ended up getting his wicket."
WESTBURY managed to defend 137 in a 12-run win over Ulverstone.
On a day when Dane Anderson made a golden duck and Joel Lloyd a diamond duck, quick Jono Chapman (25) and no. 9 Kieren Hume did their bit to help assemble a competitive total.
The Black Caps looked out of it at 6-31 as Chapman (3-6 off 9.2) and Nick Spencer (4-18) fired before tailenders Rohan Speglic (24*) and Will Dau (23) ensured some nervous moments.
"We probably weren't in a position where we should have been winning, but we managed to bowl well enough and field well enough," Shamrocks captain Dan Murfet said.
"They fought it out right until the end and I was a little bit nervous as we came towards the end, but you're really happy to get the four points in games like that."
