Olympic went 2-0 up inside the first quarter of the game and with Jarrod Hill demonstrating the form that has made him one of the best goalkeepers in the competition looked good value for a much-wanted top-four scalp.
Spaniard Nil Sanz continued his impressive goal-scoring run with a fine solo goal in the sixth minute and then turned provider for Aaron Campbell to fire in one of the team's best goals since returning to statewide competition.
Adam McKeown hauled the hosts back into it on 36 minutes but they had to wait twice as long for an equaliser, eventually provided by Nicky Edwards from the edge of the box.
The goal served to open the floodgates as Mat Sanders added another from the spot three minutes later before setting up McKeown four minutes after that.
A silky finish from Matthew Pace made it 5-2 late on before Sanders struck again in stoppage time to wrap up both the scoreline and his grip on the NPL Tasmania golden boot award.
City went about things the opposite way at Warrior Park, with Lino Sciulli's side clawing their way back into proceedings after finding themselves 4-0 down after an hour.
Fergus Aitken proved pivotal, pulling a goal back on 64 minutes and laying on a second for Isaac Degetto nine minutes later.
However, Olympia hit back to complete a 5-2 victory and finish their season on a high just two days after winning their appeal against a points deduction to cement second place on the ladder.
The results mean City finished the season in seventh place with seven wins and 25 points from their 24 games, Olympic were eighth with four wins and 14 points, ahead of Clarence whose only points of the campaign came from a 1-0 win over Riverside.
The biggest shock of the day came at Darcy Street where champions Devonport were beaten 2-0 by their Lakoseljac Cup conquerors, third-placed South Hobart.
Kobe Kemp produced a beauty from an Adam Gorrie corner on 12 minutes and goalkeeper Nathan Pitchford had to be at his best to keep the scoreline down before Kemp doubled the home side's lead on 55 minutes.
A rare blank for Miles Barnard killed off his chances of catching Sanders in the goal-scoring stakes.
At Lightwood Park, goals from Jack Turner, Noah Smithies-Sharples and Simon Vivarelli earned Kingborough a 3-2 win over Glenorchy who hit back through Thomas Bellini and a late Alex Leszczynski penalty.
