A far cry from the food offerings when the mountain bike event was in town in 2017, Rebel Food Tasmania founder Louise Morris said the North-East had stepped up its food game with the help of some unusual ingredients.

"It has been a massive change two years on from the last world series," she said.

"It's an interesting nexus when the food lineup was chips and pies in bain-maries, but now there's fresh food available for the outdoor sports market.

"Derby as a tourism destination is changing rapidly. Derby is riding the wave of food tourism."

Ms Morris collaborated with fellow North-East businesses Trailhead Food Co, Little Rivers Brewing Co and Derby General Store & Providore to present edible insect products throughout the weekend.

The providore was selling Mocha Mealworm Powerbars and Jules and Mark Cornish were cooking up farmed crickets in coriander and garlic to serve in wraps with tzatziki, cucumber and salad. 

"We sold out of our mocha bars. [Riders] wanted all the micronutrients and all the energy," Ms Morris said.

"We got a lot of great feedback. Trailhead Food Co was cooking up extra crickets to show how similar they are to prawns when cooked well. It's a really different eating experience."

Ms Morris set up her edible insect farm business Rebel Food Tasmania just outside Derby as an alternative protein source about a year ago.

Working with chefs to trial her insects products, she has invested her time heavily in research and development to find the right mix of crickets, mealworms and wood roaches.

"I asked [chefs] if they would try creating dishes and we're getting great feedback, especially when they are paired with other great Tasmanian products," she said.

Rebel's insects eat food, brewing grain and wine grape leftovers, creating a sustainable and healthy food choice that helps eliminate waste at the same time.

The wider North-East community comes together well for events like Enduro, captalising on the region's natural drawcards and popularity with outdoor enthusiasts, Ms Morris said.
