Having arrived at the crease at 2-35 on Friday, the former state player brought up his third ton of the season during the middle session on Saturday before eventually departing for 108.
The 34-year-old's stay at the crease lasted 311 minutes - exactly the same as opener Dan Murfet - and included 11 boundaries.
The knock was Anderson's second ton in a Cricket North decider and the first since Clinton Reid made 108 in the 2015-16 grand final.
Westbury was 5-251 with a lead of 117 late in the second session after South Launceston posted 134 on the first day.
