Owners Olivia and Rob Morrison bought the business at 112-114 George Street, which has been operating under the name Caffe Libations, and will transform it into Nook Launceston from the beginning of March.
“We will focus on takeaway coffee and food you can take with you, like pastries, cookies and lunch boxes,” Ms Morrison said.
“It will be somewhere you can stop and grab a coffee and pick up your food for the day,” she said.
Nook will serves Single O coffee and the cafe will be managed by Tom Chandler, of South Coast Canteen.
“We think it will work,” Ms Morrison said.
“We’ve just taken on another baker [at Bread & Butter] and want to hire an apprentice. We needed to sell more bread so we thought we’d buy another business and supply our products into the space,” she said.
Not long after making this decision the couple saw the George Street business for sale.
“We saw an opportunity and just jumped into it straight away.”
Designer Felix Blackman is creating the Nook’s branding as well, so the it will have “the same feel”.
Bread & Butter is hiring staff for both venues, including a front of house manager for the Cimitiere Street venue.
