Owned and operated by Anthony and Cathy Kwong, Nitro Ella is in the old Peters ice cream office, which is next door to Tsing Wah Asian Grocers in Launceston.
“We saw a niche in Tasmania that we could enter, so we thought about making nitro ice cream,” Mr Kwong said.
After seeing the popularity of bubble teas, Vietnamese-style coffees and nitrogen ice cream through their travels, the Kwongs decided to introduce the refreshments to Launceston.
Liquid nitrogen is used to rapidly freeze the ice cream at -250 degrees, causing the fat and water particles to remain very small.
This process creates an unrivalled melt-in-your-mouth creaminess that is sure to impress ice cream connoisseurs.
The Kwongs have been trialling recipes ahead of the ice creamery’s grand opening on Friday.
Using Ashgrove milk and a secret ingredient, they have perfected the ice cream flavours.
“We wanted to use a good quality milk … using home brand milks changes the taste of the coffee and products,” Mr Kwong said.
“By using a good-quality Ashgrove product, it makes a big difference.
“It took three months to find a recipe we like for the ice cream.”
Named after the Kwongs’ daughter, the ice creamery will offer three initial flavours: honey dew, mango and honey.
“We wanted to have less flavours to begin with,” Mrs Kwong said.
There are plans to offer a dairy-free vegan ice cream, but Mr Kwong is still perfecting the recipe.
The ice creamery will also sell coffees and a range of fruit juices with milk, cream cheese and coconut tops.
Mr Kwong’s favourite fruit juice is watermelon with the cream cheese topping.
The Kwongs have been busy training staff ahead of Nitro Ella’s opening at 11am on Friday.
Nitro Ella will open from 11am to 8pm, Monday to Saturday.
Mr Kwong said there was potential to open the ice creamery earlier, but they were waiting to see if there was enough demand.
