Tasmania Police intercepted the man speeding at 163 km/h at Bothwell about 3pm on Saturday.
The man was travelling more than 60 kilometres above the legal speed limit, on Highland Lakes Road, and evaded police before being later located at Goodwood.
The man is assisting police with their inquiries and is due to appear in court at a later date.
His motorcycle was seized by police for a period of 90 days.
A Tasmania Police spokesperson said there was substantial penalties involved with this type of driving behaviour.
“[We] take this opportunity coming into the busy Christmas season to remind motorists that this behaviour could result in tragic circumstances, not only for the rider but for the many other road users that are expected to use the roads during this time.”
