The 17 community groups, who collectively call themselves One Night Mayhem, will work together to organise the stalls.
All money raised will be split equally between each group, and will stay in the region.
One Night Mayhem member Kemuel Wood said more than 160 volunteers from the town were involved.
“Different groups start from Thursday through to Sunday, and everyone has a different role to play,” he said.
“It’s about community, it’s not about individuals.”
Mr Wood said there would be a large selection of food available from stalls on the day.
“We’ve got a selection that is going to blow your mind,” he said.
Gourmet pies, nachos and tacos, burgers, pizza, bratwurst, seafood, ice cream, buddha bowls, curries, dumplings, and cronuts were just some of the foods planned, alongside drinks such as coffee, juice, and kombucha.
Eftpos will be available at each stall.
All food packaging and cutlery will be single use and biodegradable and compostable to ensure minimal waste.
The One Night Mayhem co-op includes the following 17 not-for-profit groups:
- St Helens Basketball Association
- St Helens Netball Association
- St Helens School Association
- Bay of Fires Arts Association
- East Coast Archery
- East Coast Swans
