Jack Harrison Sadler, 26, of Riverside, appeared in the Launceston Magistrates Court on Wednesday morning.
His lawyer Greg Richardson did not attend and Mr Sadler did not enter a plea to the murder charge.
The matter was adjourned until September 11.
Gemma Clark, 25, of Riverside, pleaded not guilty to a charge of being an accessory after the fact.
Her lawyer Evan Hughes did not apply for bail and Ms Clark was committed to the Supreme Court for a directions hearing on October 15.
The back of the court room was full with family and friends of the alleged murder victim as well as lead investigator Detective acting Inspector Craig Fox and northern police Commander Brett Smith.
Mr Anderson-Brettner disappeared last Wednesday and his torso was found near Myrtle Park on the Tasman Highway on Sunday night.
