The staff will be absent from schools at different times as they fight the Catholic Education Office for better conditions.
IEU assistant secretary Angela Briant said that after 18 months and 27 meetings, work stoppage was the last resort.
"The Catholic Education Office seems to think members will cop an inferior offer for support staff and for teachers," she said.
"When they have an offer that respects the time and work of our members, we are ready to listen.
"Until that happens, we won't stay silent while some of our lowest paid members continue to miss out on the same basic conditions that support staff in government schools receive."
IEU members in Launceston will stop work next Tuesday, from 8.30am to 12.30pm and will assemble at Civic Square at 9.15am, before marching down Cameron Street to the Albert Hall.
A similar event will take place in Hobart next Wednesday and in Burnie on Thursday, July 3.
