Police say that just after 10pm, a man entered the Subway Glenorchy store on Eady Street.
Brandishing a knife, and covering his face with his top, he approached two teenage female staff members and demanded money.
He left the store with an undisclosed amount of cash in a Subway bag and an ANZ bag, and fled on foot towards the Eady St oval.
He is described as being in his late 20s, 160 to 165cm tall and of medium build.
He was wearing black track pants, a grey hooded jumper and a distinctive pair of orange shoes.
Tasmania Police Senior Constable Jennifer Wood said: ``This would have been a terrifying experience for the two young shop attendants and we are doing everything we can to identify and arrest the offender.''
Anyone with information should contact Senior Constable Wood from Glenorchy Criminal Investigation Branch on 6230 2827.
