We are currently seeking a Sous Chef in Middlemount to support the Head Chef with daily operations and food service, including routine meals and service. Our Sous Chef will work across a 14/7 day DIDO roster.
About the role
Ensure efficient preparation and delivery of meal services by ensuring regular consultation with Head Chef regarding expected numbers and additional or unplanned requirements
Ensure all areas of the kitchen are clean, sanitised and presentable at all times
Support and participate in the implementation and management of the Food Safety Program, including actively identifying hazards, employing appropriate controls and recording incidents
Operate large-volume cooking equipment such as grills, deep-fat fryers and barbeques
Check, record and sign off on all shift cleaning schedules, and documentation relating to incoming goods, food holding units and temperature probes
Report all defective equipment and tools to the Head Chef
Participate in regular stock take an inventory control activities
What we’re looking for
Australian recognised Commercial Cookery qualification
Minimum 2 years experience in large commercial kitchens
Sound knowledge of Food Safety Standards, relevant legislation and statutory obligations
Demonstrated interpersonal communication skills and the ability to work as a team member
Enthusiasm and commitment to high standards of customer service
HACCP Level 2 certification (plus)
Fully Vaccinated against Covid-19 (Vaccination Certificate or Proof of Valid Medical Exemption will be required)
