Opened at the former site of the Red Brick Road Ciderhouse, owner Michael Bernhagen moved back to Tasmania to open the boutique venue.
It's an exciting venture for the seasoned hospitality professional, his first as an owner-operator.
Mr Bernhagen said he opened the business as a way to celebrate the best of what Tasmania has to offer.
IN OTHER NEWS:
"That next step for me in my career was to have my own venue," he said.
"I wanted to do something small, and be completely in control of something independent and unique.
Small and unique it is - the venue under COVID restrictions has the capacity for 19 patrons at a time, part of what makes the boutique experience special.
With a focus on Tasmanian producers, the offering will be constantly changing.
"Tassie is the best place in the world to be doing anything beverage wise, we have a massively good industry here and everyone's creating amazing product," Mr Bernhagen said.
"We're going to have an everchanging menu, we won't just be showcasing one wine or one beer - it'll be a regular rotation and as soon as I'm out of one product I'll be sourcing a different one to fill that spot."
Mr Bernhagen said that decision was about providing a unique experience for every visit.
"It means we can showcase some of the smaller areas, the smaller vineyards and breweries and not just stick with the big guys," he said.
"It really excites me if I can just get say 24 bottles from one vineyard and then once it's gone, it's gone.
