Meander Valley Dairy’s double cream has a decadent 56 per cent milk fat content, which ensures it is thick enough to scoop out with a spoon.
Dairy product manager Tommy Madsen and staff at the Kings Meadows production facility are still celebrating after their double cream was named best exhibit in show and champion dairy (other product) at the Royal Hobart Fine Food Awards on Friday.
“It’s just natural cream that is spoonable and dollopable,” Mr Madsen said.
“We don’t use any thickeners. It’s just the grass to the cow to the producer. We just pasturise the cream and make it even more rich and creamy,” he said.
The cream thickness varies seasonally, so Meander Valley Dairy produces it in small batches.
“It’s an art form,” Mr Madsen said.
Robur Farm Dairy’s marinated goat fetta, which is also produced at the Kings Meadows facility, was named champion in the Sheep & Goat Product category.
