Police attended a house in Corrange Drive in the state’s south at 11pm to find the woman with significant burns to her face and body.
She was immediately taken by air ambulance to the Prince Alfred Hospital for specialist treatment for her injuries.
Police arrested a man at the property, who also suffered burns to his body, for assault.
He is being treated at the Royal Hobart Hospital while under police guard.
Police say while investigations are continuing, it is believed that the man and the woman were both in an outbuilding on the property in which the fire had started.
Detectives and forensic investigators will remain at the scene for much of the day and would like to speak to witnesses.
Detective Inspector Craig Joel said there was a history of family violence between the man and the woman though there are no family violence orders in place.
