The 2017 Australian Fish and Chips Awards are under way and thousands from across the country have already voted, with more than 50 Tasmanian businesses on the nomination list.
Kings Meadows Seafood’s Sue Amerikanos said the old adage of ‘practise makes perfect’ was especially true for cooking good fish and chips.
“A good cook, they might not make the cake perfectly the first time, but by the second, third and fourth time it gets better,” Mrs Amerikanos said.
“It does take a precise time, it's like an egg, you get better at judging exactly when it’s ready.”
The Kings Meadows business, which has been in the Amerikanos family for 42 and is now owned by Mrs Amerikanos’ son Dimitrios, is preparing for another busy Good Friday.
Mrs Amerikanos said the Easter period always posed a challenge for those in the fish business.
“On the Friday we do three times your (average) day's takings.
“In the long run you're three times busier, but then what happens is that the next day people don’t want fish and chips, and then the next two days you're closed because there's no one around - they're all down at the coast.”
The winner of the Australian Fish and Chips Awards will be announced in September.
