The 22-year-old was tied up and gagged at gunpoint, alongside co-worker Josh Humphries, at the Trevallyn Gourmet Bakery just as the pair began work.
Mr Duncan said he begged the thieves not to take the ute, as he had bought more than $20,000 worth of upgrades – none of which is covered by insurance.
“The ute is basically my life, I can go anywhere with it … there’s not many weekends that I’m not out shooting, or camping or towing the boat,” he said.
“There’s so much to see [in Tasmania], how many people can say they’ve been a lot of places in Tassie.”
Bakery owner Tony Mitchell said Mr Duncan was always a hard worker and was just “a good kid”.
“I’ve had him there for six years, he works six days a week, 10 hours a day and he’s probably had three sick days off since he's been there,” he said.
“He’s busted his arse to get that vehicle and now some low-life has taken it away.”
Mr Duncan also had tools stolen out of his ute 14-months ago while at work.
Tasmania Police is continuing investigations into the robbery, and have released CCTV images.
