Wakuda will be training 10 budding cooking apprentices for a dinner on Friday night, showcasing Tamar Valley Truffles, Tasmanian abalone, wallaby and Huon salmon.
The Japan-born chef is known for his use of seasonal flavours and influenced by classical French cooking.
Since moving to Sydney in 1982, Wakuda has achieved success through his renowned restaurant Tetsuya’s, named several times as one of the best in the world.
The dinner is the fourth in the Great Chef Series, following other renowned chefs Jacques Reymond, Donovan Cooke and Mark Best.
TasTafe Drysdale education manager Christopher McGimpsey said previous dinners had taught students to think outside the square.
