Anna Roney, who faces daily pain from the condition, will travel to Mexico in two weeks for stem cell treatment, hoping for a new life for her and her children.
Almost $75,000 has been raised for Ms Roney and this Sunday a fundraiser will be held to help reach her $80,000 goal and cover the total cost of treatment.
“It’s very humbling, we never thought we would get even half the support we did,” Ms Roney said.
A gin tasting night will be held at the Launceston RSL, hosted by Adam Pinkard and Ms Roney’s long time friend Rhiannon Menegon.
“I thought if this was me, I would hope my friends would rally around me and support me,” Ms Menegon said.
“And I know without a doubt Anna would do that if I was in a similar situation.
“It’s been really moving to see the support people have given.”
Mr Pinkard, who is one of the men behind Adam’s Distillery, said he wanted to get involved as soon as he heard about Ms Roney’s battle.
“I have a background in spirits, so I wanted to organise a gin tasting night, something different for those who don't like whisky,” he said.
“I thought we could combine the two, one thing lead to another and a plan for the night came together.
“Everyone involved has been fantastic. It's going to be a fun night.”
All funds raised from the event will go directly towards Ms Roney’s treatment.
