Alongside partner Don Monk, Ms Brown will deliver a scrumptious seafood menu at the Spring Vale Wines with the Vineyard Seafood Restaurant stall.
She said she was excited to incorporate East-Coast produce, including mussels, into her culinary offerings.
‘‘With the mussels, we’re steaming them in the woodfired oven in fresh napoli sauce with fresh chilli and basil,’’ Ms Brown said.
The stall will offer Ms Brown’s signature dishes including woodfired oven roasted crayfish, pan seared scallops and chargrilled octopus.
Ms Brown’s attended her first Festivale in 2007 as owner and operator of Cable Station restaurant.
Since her inaugural Festivale, Ms Brown has collaborated with various wineries in joint award-winning partnerships to quench customers’ thirst and hunger in one delicious hit.
Ms Brown said she loved the unique feel of Festivale.
‘‘The committee have got a fabulous formula ... the park itself, great entertainment and lots of big shady trees,’’ she said.
