Show publicity officer Jo Dowling said that Mr Piper's presence on both Friday, May 29 and Saturday, May 30 would provide an exciting addition to the show line-up.
Mr Piper boasts more than three decades' experience in the meat industry.
He joined Meat and Livestock Australia in 2007, where he has held red meat butchery master classes, raising retail standards while working across food service with executive chefs cultivating relationships and encouraging "nose-to-tail" use of beef, lamb, veal and goat in Australia.
He will break down lamb carcasses using only a hand saw and knives and explain how to best use secondary cuts of lamb.
Ms Dowling said that all Paddock to Plate lambs, live and carcase, must be be delivered to TQM, Cressy no later than 5pm on Tuesday, May 26 and asked entrants to note the change in weight ranges. The trade section will cater for lambs from 18-22 kilograms and export the section for 22.1-26 kilograms.
Ms Dowling said that TP Jones and Co had run the competition for five years.
"At this year's show they are expecting 30 entries over two classes," she said.
The overall winner of the competition wins $500 cash and the Peter Williams Memorial Trophy."
England Wool has given organisers $1000 to accompany the trophy they provide in the merino fleece competition for fleeces of 18.5 micron or finer.
Show wool co-ordinator Alan Phillips said that fleeces entered in this competition were those best suited to the Italian market that New England Wool supplies.
