Food vans, community groups, coffee vans and wineries were invited to register their interest by Monday, March 23.
Dorset council community development officer Anneka Ferguson said that the advertisement had created more interest than originally anticipated.
``Some applicants will, unfortunately, miss out and we'll be giving preference to local community groups,'' she said.
``A lot of people are pretty excited about the event.''
Catering options were sought for Saturday, May 16, from 9am-6pm and Sunday, May 17, from 9am-5pm.
Vendors were able to request to cater for one or both days and/or lunch only - 12pm-3pm, with a optimal locations being reserved for those who were prepared to cater all weekend.
The council is also considering providing sites to vendors of non-edible Tasmanian products, particularly those specific to the north-east.
