The former Ulverstone quick played 17 matches over the past four Big Bash League seasons and was part of the 2003 final and Champions League team.
News of Hilfenhaus's move came just minutes after it was announced that his Tasmanian Tigers teammate Jackson Bird had left the Stars to take up a three-year deal with the Sydney Sixers.
While Sixers general manager Dominic Remond was delighted to welcome Bird, who grew up on Sydney's northern beaches, Hurricanes cricket manager Andrew Dykes said the club was disappointed to lose Hilfenhaus.
"As an experienced player we were keen to extend Ben's contract but unfortunately were unable to agree terms with Ben's management," Dykes said.
"We trust Ben has fond memories of his time with the Hurricanes and we wish him well for the future."
The BBL05 trade period closes on Friday with clubs able to transfer contracted players to another club at any stage of their contract.
