Commonwealth prosecutors have accused Newstead woman Susie Fisher of stealing more than $30,000 from Australia Post, between April 2011 and May 2012.
Her licensed post office was part of her pharmacy business in George Town Road, Newnham.
Yesterday was day five of the hearing in the Launceston Magistrates Court and the defence opened its case with Ms Fisher giving evidence.
Defence solicitor Evan Hughes asked his client about her community involvement which took her away from work.
Ms Fisher said this included theatre productions and the children's charity Moonbeam, and she was previously on the Crime Stoppers committee.
Mr Hughes asked Ms Fisher about her leaving Crime Stoppers and she said it had nothing to do with her court matter.
She said she had no criminal history, had never stolen anything and firmly denied taking any money from the post office and further denied leaving any notes about money.
"I'm the sort of person who would give you the coat off my back," Ms Fisher said.
She further stated that she had nothing to do with the daily running of her post office.
"I'm not very good at it," Ms Fisher said.
She said that when an employee told her about the safe having a deficiency of more than $15,000, she "had a shop full of people" and asked the employee to doublecheck.
"In reality, I did not have the time and I did not know how," Ms Fisher said.
She also gave evidence about the times she consulted a Launceston policeman, an acquaintance, about her suspicions that one of her employees was a thief, but the senior sergeant told her that police could not lay charges without proof.
Magistrate Reg Marron adjourned the hearing to May 14, almost a year after the case started.
