Hazelbrae is the state's first hazelnut farm, and the orchards have more than 5000 trees.
Owner Christie Mcleod will begin selling the oil at farmers' markets from next weekend, after positive reviews at Hazelbrae's first open day earlier this month.
Ms Mcleod said the hazelnut industry was new to the state.
"To date there has not been enough production of hazelnut kernels to produce the oil," she said.
"We're hoping that this year's production will be enough to keep it in stock all year round.
"We're launching it pre-Christmas, ready to see how it goes, and we're already pretty confident that it's going to go really well."
The oil can be used in sweet or savoury dishes, and is also good for skincare.
There will be a limited number of bottles available before Christmas, and Ms Mcleod said she hoped to have plenty more available after the harvest in March.
"The feedback [has been] outstanding, so we're really excited about the product," she said.
"It's cold-pressed, so it's just like a regular olive oil. There's no chemical extraction, it's a really good product, a really healthy product."
