Detectives yesterday alleged the man activated the sprinkler system inside Hotel Collins damaging carpet, plaster and electrical fittings.
Detective Acting Inspector Craig Joel, of Hobart CIB, alleged the man indecently assaulted a woman who tried to intervene.
"Staff at the hotel acted quickly to prevent further damage and it is to their credit that no guests were injured in the damage spree," he said.
The damage caused significant disruption to hotel operations and 46 guests have been relocated to other accommodation in Hobart.
The man has been charged with causing damage to property, committing a nuisance and indecent assault.
He will appear in Hobart Magistrates Court at a later date.
